Roots is a tasting menu restaurant on Tourism Road on the Catangnan side of General Luna, set in the grounds of Kaimana Resort on the way toward Cloud 9. It was started by a small group of chefs and restaurateurs including Filippo Turrini and Inés Castañeda, who bring Italian, Spanish and Latin American cooking to ingredients sourced from Siargao farmers and fisherfolk and from around the Philippines. The room is open-sided and relaxed, with a bar counter and a wall of wine.
Dinner is a set menu of around seven courses that changes with the season, and a new menu rolled out in 2026. Recent diners single out the ceviche, the octopus, mojama (cured tuna), house churros and a chocolate finish, and the staff explain each course as it lands. There is a drinks pairing, good cocktails, and dessert comes with a spoon you pick from a collection gathered around the world.
Roots serves dinner only, 6pm to 10pm, and is closed on Tuesdays. The new tasting menu is ₱2,900 per person, and with drinks most tables spend ₱2,500 to ₱4,500 a head. Book ahead through their Instagram, and mention allergies when you reserve, since the kitchen adapts courses well with notice.
