Dayo Cafe/Bar in General Luna handles the shift from morning to evening better than most spots in town: coffee and light cafe food by day, drinks and a bar feel as the afternoon turns into evening, without an awkward in-between where the menu doesn't fit the hour.
The name says it well. Dayo means visitor in Filipino and nods to the island's relationship with people passing through, but the cafe has a regulars' quality, with a loyal base of longer-stay visitors who treat it as their default daytime spot.
The food covers Filipino and Western cafe classics without either being the focus. The coffee is the morning anchor and the drinks are what keep people around later. The crossover hour, around 4 to 6pm, is when it's at its most comfortable, with the day crowd thinning, the bar energy starting, and the heat coming off the day.
