El Kabron Siquijor

El Kabron is a sunset pool bar inside Apo Diver Beach Resort on Solangon Beach, San Juan, right next to JJ's on the Circumferential Road. The bar looks across the pool to the sand and the sea, with sun loungers out front, and once the light starts to go it becomes one of the island's easiest places to meet travellers and locals.

Cocktails are the point. The menu runs to dozens of house originals named after regulars, led by Ganning's Delight (gin, lemon, basil and honey) and Kimylicious, plus a watermelon gin and tonic and a spicy margarita made with house-spiced rum. Order the El Kabron Poison and it scores a point for your home country in the bar's yearly Global Sip-Off. The kitchen covers all-day breakfast, avocado toast, tuna sandwiches and divers' meals, and owner RR and the bar team are a big part of why people keep coming back.

It opens at 7:00 AM daily and closes at 10:00 PM Monday to Thursday, midnight on Friday and Saturday and 11:30 PM on Sunday. On the official menu most cocktails cost ₱170 to ₱259, the Poison is ₱199 and local spirit shots start at ₱80. Wi-Fi is free. Arrive an hour before sunset to get a seat facing the water.
