Parola is the resto, café and bar at the corner of Quezon and Burgos streets on the Mati Baywalk, a few steps from Seaside's empanada counter. The name means lighthouse, and the room is one of the more dressed-up in the city centre, with warm lighting, background music, spacious tables and seasonal decorations at Christmas.
The menu runs from Filipino breakfast plates with garlic rice to pizza, pasta and grills. Baby back ribs are the dish reviewers mention most, with shrimp scampi, pumpkin soup, sour pork, Mongolian barbecue and the honey bacon and Overload Parola pizzas close behind. Coffee drinks like the dark mocha make it an easy stop for dessert and a drink rather than a full meal.
Open daily from 9:00 AM to 9:00 PM, and 9:30 AM to 9:30 PM on Sundays. In October 2026 shrimp scampi was ₱250, and salads and quesadillas ran ₱250 to ₱350. Everything is cooked to order and the staff warn of 40 to 45 minute waits for mains, and parking is curbside only. If you are short on time, order as soon as you sit down or call ahead on +63 966 782 0998.
