UNA is a modern Filipino restaurant inside The Salt Boutique Hotel on Urbiztondo Road, San Juan, open since January 2026. There's no sign out front, so walk into the hotel and the staff will lead you through to a clean, wood-lined dining room that looks out to the sea.
Chef Joaquin Carsi-Cruz cooks with produce from La Union and the provinces around it, and the menu is built for sharing. Start with the talong rebosado, battered eggplant in bagoong caramel, and the kinilaw ala rosa. Then get the litson baka-dobo, sous vide beef belly over crispy adobo rice in a clay pot, plus the blue crab palabok or the chilimansi pasta, and finish with the champorado ball. Cocktails use local spirits, like the Sampaguita Sangria made with Elyu fruit wine, and servers walk you through every dish.
OpenTable and Google list it open 11AM to 10PM and closed on Wednesdays. On the May 2026 menu, small plates run ₱330 to ₱540, mains ₱450 to ₱850 and cocktails ₱400 to ₱450, and it's cash only. Book through OpenTable, since walk-ins have been turned away. Ask for a table around 5PM to catch the sunset with your first drink.
